Pancakes (Alton Brown)
Ingredients
Mix
- 30 g sugar
- 12 g baking powder
- 9 g baking soda
- 9 g salt
- 840 g all-purpose flour
Pancakes
- 50 g neutral oil
- 2 eggs
- 480 g buttermilk (2 C)
- 280 g pancake mix
Directions
- Mix Batter: Emulsify oil, eggs, and buttermilk, then add to the pancake mix.
- Fold & Rest: Gently fold no more than 12 strokes with a rubber spatula. Let batter rest while griddle heats to 350°F.
- Cook: Pour ¼ C batter onto the hot griddle. Cook undisturbed 3-4 minutes, until edge bubbles set.
- Flip & Finish: Flip and cook 2 minutes more. Remove to a plate and top with butter.
Chef's Notes
- To make buttermilk, add 1 tbs vinegar to enough milk to make 1 cup. This doubles easily for larger quantities.
- This Alton Brown recipe is an alternative to the basic pancake recipe that uses a pre-made dry mix, making prep faster and simpler at cooking time
