Bacon Onion Jam
Ingredients
- 4 uncooked thick applewood-smoked bacon slices, chopped
- 1 tbs butter
- 2 medium-size sweet onions, chopped
- 4 large shallots, chopped
- ½ C balsamic vinegar
- 3 tbs light brown sugar
- 2½ tsp kosher salt
- 2 tbs chopped fresh chives
- 2 tsp chopped fresh thyme
Directions
- Cook Bacon: In a medium skillet over medium-low heat, cook bacon until crisp (8-10 minutes). Remove and drain, reserving drippings.
- Sauté Onions: Add butter to the drippings and melt. Increase heat to medium, add onions, and sauté 10-12 minutes until tender.
- Build Flavor: Add shallots, vinegar, sugar, and kosher salt; cook 1-2 minutes until sugar dissolves.
- Caramelize: Reduce heat to low and cook, stirring occasionally, 20-25 minutes until onions are deeply tender and browned.
- Finish: Remove from heat and stir in chives, thyme, and bacon.
- Cool & Store: Cool about 20 minutes or refrigerate airtight up to 3 days.
