Baked Redfish
Ingredients
- 1 cleaned redfish (5 lb or more)
- 3 medium onions, chopped
- 1 bell pepper, chopped
- 1 small can tomato sauce
- 1 dash Worcestershire sauce
- 1 stick butter
- ½ tsp garlic powder
- pinch of sugar
- Salt and pepper, to taste
Directions
- Prep Fish: Season fish with salt and pepper and let sit at room temperature while preparing the sauce.
- Make Sauce: Melt butter and sauté onions and bell pepper until onions are translucent. Stir in tomato sauce, Worcestershire, sugar, and garlic powder. Cover and simmer 45 minutes.
- Bake: Place fish in a baking dish and spoon sauce over the fish and into the body cavity. Bake at 325°F for 45 minutes to 1 hour, until the internal temperature reaches 145°F.
- Serve: Spoon extra sauce over the fish and serve hot.
Chef's Notes
- Add equal parts of cream of mushroom, cream of shrimp, and cream of chicken soup to the vegetable sauce while it is simmering.
