  1. Blend Base: In a blender, purée vinegar, onion, and honey until smooth.
  2. Emulsify: With the blender running, slowly stream in the oil until fully emulsified.
  3. Season: Add salt and pepper to taste.
  4. Store: Transfer to a squeeze bottle. Refrigerate up to 1 day; bring to room temperature before serving.
