Beef Stroganoff
Ingredients
- 1 lb top sirloin steak
- ½ medium onion, finely chopped
- ½ lb brown mushrooms, thickly sliced
- 1 garlic cloves, minced
- 2 tbs olive oil
- 2 tbs butter
- 1 tbs all-purpose flour
- 1 C beef broth
- ¾ C heavy whipping cream
- ¼ C sour cream
- 1 tbs Worcestershire sauce
- ½ tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
Directions
- Sear Beef: Heat a deep pan over medium‑high with 2 tbs oil. Sear beef strips in a single layer 1 minute per side, in batches, until just browned. Remove and keep warm.
- Cook Veg: Add 2 tbsp butter, onions, and mushrooms. Sauté 6–8 minutes until liquid evaporates and vegetables are lightly browned.
- Build Sauce: Add garlic and cook 1 minute. Stir in flour and cook 1 minute, stirring constantly. Pour in beef broth, scraping up browned bits.
- Cream: Add whipping cream and simmer 1-2 minutes until slightly thickened.
- Finish Sauce: Temper sour cream with a few tablespoons of hot sauce, then stir into the pan. Add Worcestershire and Dijon; season with salt and pepper. Simmer until creamy.
- Combine: Return beef and any juices to the pan and warm gently to a simmer. Serve hot.
