Blackened Tilapia

- Heat Pan: Preheat a cast-iron skillet over medium-high heat.
- Prep Fish: Pat tilapia fillets dry. Brush both sides with avocado oil and lime juice.
- Season: Coat both sides of the fillets thoroughly with blackened seasoning.
- Cook: Add avocado oil to the hot skillet and swirl to coat. Cook tilapia 5 minutes per side.
- Check Doneness: Fish is done when opaque, flakes easily, or reaches an internal temperature of 145*degF.
- Serve: Serve with lime wedges and garnish with cilantro.
Chef's Notes
- You can use many other firm white fish for this dish, including Mahi Mahi, Catfish, Redfish, Snapper, Halibut, and Trout.
