Carrot Gnocchi (v)
Ingredients
- 2 cups peeled and chopped carrots
- 2 egg yolks
- Pinch of salt
- ½ cup grated Parmesan cheese, plus more for garnishing
- 1½ cups all-purpose flour
- 8 tablespoons (1 stick) unsalted butter
- 3 garlic cloves, minced
- ¼ cup sage leaves
- Salt and freshly ground black pepper
Directions
- Cook Carrots: Boil carrots until very tender (12-15 minutes); drain.
- Make Dough: Mash carrots until smooth. Stir in egg yolks, salt, and Parmesan, then add flour and mix just until combined.
- Shape Gnocchi: Roll dough into ¾" logs, cut into 1" pieces, and place on a floured baking sheet.
- Cook Gnocchi: Boil gnocchi in salted water until they float (3-4 minutes); drain.
- Brown Butter: Melt butter over medium heat and cook 8-10 minutes until lightly browned and nutty.
- Finish Sauce: Add garlic and sage; cook 1-2 minutes until fragrant.
- Combine & Serve: Toss gnocchi in the butter sauce, season with salt and pepper, garnish with Parmesan, and serve immediately.
