Corn Tempura (v)
Ingredients
- 2 ears of corn (1½ C or 9 oz)
- 85 g flour
- ½ tsp baking powder
- 150 ml club soda
- 1 egg
- Salt and pepper to taste
- Sour cream or crème fraîche and smoked salmon (serving suggestion)
Directions
- Fry: Heat oil in a frying pan. Spoon ¼ cup tempura batter into the pan and fry like pancakes, 2–3 minutes per side, until golden.
- Drain & Serve: Cool on a wire rack, then serve with sour cream and caviar or smoked salmon.
Chef's Notes
- Use half the club sode to mix the lumps out of the flour mixture - this is much easier. The final product should be slightly more liquid
