Country-Style Biscuits
Ingredients
- 240 g flour
- 20 g baking powder
- 9 g sugar
- 3 g cream of tartar
- 3 g salt
- 100 g shortening
- 160 ml milk
Directions
- Mix Dry: Sift dry ingredients together and cut in the shortening until the mixture resembles coarse crumbs.
- Add Milk: Make a well, add milk all at once, and stir just until the dough comes together.
- Knead: Turn out onto a lightly floured surface and knead gently 10-12 strokes.
- Cut Biscuits: Roll or pat to ½" thickness. Cut with a 2½" biscuit cutter, dipping the cutter in flour between cuts.
- Bake: Place on an ungreased baking sheet and bake at 450°F for 10-12 minutes, until golden brown.
Chef's Notes
- Handle the dough as little as possible, as this will keep them light and fluffy.
