Crabwich
Ingredients
- 1 large egg yolk
- 6 tbs butter, melted and clarified
- 1 tbs lemon juice
- 1 tbs cream cheese, softened
- 1 tomato
- 6-8 oz cooked crab meat
- Sourdough bread
Directions
- Make Base: Whisk egg yolk until creamy, slowly adding butter.
- Mix: Add lemon juice and cream cheese; beat in a stand mixer until smooth.
- Fold Crab: Gently whisk in crab by hand.
- Prep Toast: Toast and butter bread. Top with tomato slices, seasoning with salt and pepper to taste.
- Serve: Spoon crab mixture over the toast and serve immediately
