  1. Make Base: Whisk egg yolk until creamy, slowly adding butter.
  2. Mix: Add lemon juice and cream cheese; beat in a stand mixer until smooth.
  3. Fold Crab: Gently whisk in crab by hand.
  4. Prep Toast: Toast and butter bread. Top with tomato slices, seasoning with salt and pepper to taste.
  5. Serve: Spoon crab mixture over the toast and serve immediately
