Flat Eggs

Directions

  1. Mix: Combine all ingredients in a bowl and mix well.
  2. Heat Pan: Heat oil in a wok or nonstick pan over medium until shimmering.
  3. Cook First Side: Pour in egg mixture and tilt the pan to coat evenly. Cook, gently moving the pan, until set on the bottom (3-4 minutes).
  4. Flip: Slide a spatula underneath and flip the egg in one piece.
  5. Finish & Serve: Cook the second side 1-2 minutes more, then serve immediately.
