Flat Eggs
Ingredients
- 3-4 eggs, well-beaten
- 2 tsp soy sauce
- 1 tsp Fish sauce
- 1 tsp oyster sauce
- ½ tsp sugar
- ½ tsp white pepper
- 2 tbs neutral-flavored cooking oil (vegetable, peanut, canola)
Directions
- Mix: Combine all ingredients in a bowl and mix well.
- Heat Pan: Heat oil in a wok or nonstick pan over medium until shimmering.
- Cook First Side: Pour in egg mixture and tilt the pan to coat evenly. Cook, gently moving the pan, until set on the bottom (3-4 minutes).
- Flip: Slide a spatula underneath and flip the egg in one piece.
- Finish & Serve: Cook the second side 1-2 minutes more, then serve immediately.
