French Onion Soup
Ingredients
- 4 tbs unsalted butter
- 2 lbs large onion
- ½ C white wine
- 6 C low sodium beef broth
- 1 tbs white wine vinegar
- 1 tbs dried thyme
- 1 tsp salt
- 1 tsp freshly ground pepper
- 4 C cubed French bread
- ¼ C extra virgin olive oil
- 1 C shredded Swiss cheese
Directions
- Caramelize Onions: In a large heavy-duty pot over medium-high heat, melt butter. Add onions and cook 30-40 minutes, stirring and scraping the bottom occasionally, until deeply caramelized.
- Deglaze: Add white wine and cook ~5 minutes.
- Build Soup: Add beef broth, vinegar, and thyme. Bring to a boil, then lower heat and simmer 10 minutes. Season with salt and pepper.
- Prep Topping: Preheat oven to 450°F. In a large bowl, toss bread cubes with olive oil and cheese; set aside.
- Assemble: Spoon soup into oven-safe bowls or ramekins. Top each with a handful of bread cubes.
- Bake: Transfer bowls to the oven and bake until croutons are golden and cheese is melted.
- Serve: Remove from oven, cool slightly, garnish with extra thyme, and serve hot.
