French Onion Soup

Ingredients

Directions

  1. Caramelize Onions: In a large heavy-duty pot over medium-high heat, melt butter. Add onions and cook 30-40 minutes, stirring and scraping the bottom occasionally, until deeply caramelized.
  2. Deglaze: Add white wine and cook ~5 minutes.
  3. Build Soup: Add beef broth, vinegar, and thyme. Bring to a boil, then lower heat and simmer 10 minutes. Season with salt and pepper.
  4. Prep Topping: Preheat oven to 450°F. In a large bowl, toss bread cubes with olive oil and cheese; set aside.
  5. Assemble: Spoon soup into oven-safe bowls or ramekins. Top each with a handful of bread cubes.
  6. Bake: Transfer bowls to the oven and bake until croutons are golden and cheese is melted.
  7. Serve: Remove from oven, cool slightly, garnish with extra thyme, and serve hot.
