Grilled Pork Chops with Oyster Dressing

  1. Prep Oven: Preheat oven to 400°F.
  2. Season Chops: Coat pork chops with 2 tbs olive oil and Creole seasoning. Grill ~8 minutes per side; set aside.
  3. Cook Vegetables: In a large pot, heat 2 tbs olive oil. Sauté vegetables 2-3 minutes until wilted; season with Creole seasoning.
  4. Add Oysters: Stir in oysters and cook ~1 minute, just until edges begin to curl.
  5. Build Dressing: Whisk in cream, hot sauce, and Worcestershire.
  6. Add Bread: Fold in bread cubes until evenly moistened.
  7. Finish Mixture: Remove from heat; whisk in eggs, season with salt and pepper, then fold in green onions and cheese.
  8. Bake Dressing: Transfer to a buttered 9x13" baking dish. Cover with foil and bake 30 minutes, then uncover and bake 15 minutes more.
  9. Rest: Let sit 5 minutes before serving.
  10. Plate: Mound dressing in the center of the plate, lean chop against it, and garnish with leeks, cheese, green onions, and peppers.
