Kung Pao Brussels Sprouts
Ingredients
- 2 lbs Brussels sprouts, halved
- 2 tbs olive oil
- 1 tbs sesame oil
- 2 cloves garlic, minced
- 1 tbs cornstarch
- ½ C soy sauce
- ½ C water
- 2 tsp apple cider vinegar
- 1 tbs hoisin sauce
- 1 tbs packed brown sugar
- 2 tsp garlic chili sauce
- Pinch red pepper flakes
- Kosher salt & freshly ground black pepper, to taste
- Sesame seeds, chopped roasted peanuts, and sliced green onions, for garnish
Directions
- Preheat: Heat oven to 425°F.
- Prep Brussels Sprouts: Toss Brussels sprouts with olive oil, salt, and pepper. Spread in a single layer on a large rimmed baking sheet.
- Roast: Roast until tender and slightly crispy, about 20 minutes. Transfer to a large bowl.
- Make Sauce: In a small saucepan, cook garlic in sesame oil over medium heat until fragrant, about 1 minute. Add soy sauce, water, apple cider vinegar, hoisin sauce, brown sugar, and chili paste. Season with salt, pepper, and red pepper flakes. Stir in cornstarch, bring to a boil, and simmer until thickened, about 3 minutes.
- Glaze: Pour sauce over Brussels sprouts and toss to coat. Return to baking sheet and broil until glossy and slightly caramelized.
- Serve: Garnish with peanuts, sesame seeds, and green onions.
