Marinara Sauce
Ingredients
- 2 cans San Marzano canned tomatoes (28 oz)
- 2 tbs tomato paste
- 1 onion, julienned
- 6 cloves garlic, minced
- 6 basil leaves
- 1 C red wine
- dash olive oil
- Salt and pepper to taste
Directions
- Sauté Onions: Heat olive oil over medium-low. Add onions, season with salt and pepper, and sweat ~10 minutes until soft and translucent.
- Add Garlic & Herbs: Stir in garlic and cook 3 minutes more. Add basil leaves and red chili flakes (if using) and wilt ~2 minutes.
- Cook Tomato Paste: Add tomato paste and cook 3-5 minutes to caramelize and bring out sweetness.
- Deglaze: Increase heat to medium-high, add wine, and reduce by half, 3-5 minutes.
- Simmer Sauce: Reduce heat to medium-low, add canned tomatoes, and cook ~90 minutes, stirring occasionally.
- Finish: Remove from heat and purée with an immersion blender to desired texture. Season with salt and pepper to taste.
