Maryland Crab Cakes
Ingredients
- ½ red pepper, finely diced
- ¼ cup mayonnaise
- 3 scallions, thinly sliced
- 1 large egg, beaten
- 1 tbsp Dijon mustard
- 2 tsp lemon juice
- 1½ tsp Old Bay Seasoning
- 1 pound lump crab meat, picked through for cartilage and shells
- 1¼ cup panko breadcrumbs
- ¼ tsp kosher salt
- pinch ground black pepper
- 3 tbs vegetable oil
Directions
- Mix Base: In a bowl, combine mayonnaise, pepper, scallion, egg, mustard, lemon juice, and Old Bay seasoning until well mixed.
- Add Crab: Gently fold in crabmeat, breadcrumbs, salt, and pepper, taking care not to overmix. Cover and refrigerate at least 1 hour.
- Form Cakes: Remove mixture from the refrigerator and shape into patties, keeping them about 1" thick.
- Heat Oil: Heat oil in a skillet over high heat until very hot. Test with a pinch of flour - it should sizzle immediately.
- Fry: Add crab cakes without overcrowding. Fry 4-5 minutes per side, until golden brown and crispy.
- Drain & Serve: Transfer to a wire rack to drain briefly. Serve with your favorite dipping sauce.
