New Orleans Scalloped Corn
Ingredients
- 4 tsp butter
- 1 large onion, finely chopped
- 1 large sweet red pepper, finely chopped
- 4 C frozen corn
- 2 large eggs
- 1 C fat-free milk
- 1 tbs sugar
- 1 to 2 tsp hot pepper sauce
- ½ tsp dried thyme
- ¼ tsp salt
- ¼ tsp pepper
- 1¼ C crushed reduced-fat butter-flavored crackers (about 30 crackers)
- 5 green onions, sliced
Directions
- Preheat: Heat oven to 350°F.
- Sauté: In a large skillet, melt butter over medium‑high heat. Add onion and pepper and cook until tender.
- Cook Corn: Add corn and heat through, stirring occasionally. Remove from heat.
- Mix: In a small bowl, whisk eggs, milk, sugar, pepper sauce, thyme, salt, and pepper. Add to corn mixture and stir in crushed crackers and green onions.
- Assemble: Transfer mixture to a greased 2-qt baking dish.
- Bake: Bake uncovered until set and a knife inserted in the center comes out clean, about 35-40 minutes.
