Poppy Seed Dressing
Ingredients
- 300 g sugar
- 3 g dry mustard
- 12 g salt
- 160 ml C white vinegar
- 45 ml onion juice
- 480 ml vegetable oil
- 27 g poppy seeds
Directions
- Mix Base: Combine sugar, mustard, salt, and vinegar. Stir in onion juice until fully blended.
- Emulsify: Slowly add oil while beating constantly until the dressing thickens.
- Finish: Add poppy seeds and beat a few minutes more.
- Store: Refrigerate until ready to use. Makes about 3½ cups.
Chef's Notes
- Any neutral oil will work, but never olive oil
- Best made with an electric mixer or blender on medium speed, though it can be done by hand.
- For the onion juice, grate a large white onion on a fine grater or blend it, then strain.
- To prevent graininess, heat vinegar and sugar together until sugar dissolves, then cool before mixing.
- If the dressing separates, pour off the clear liquid and re-emulsify by beating again, slowly adding the mixture back in.
