Pork and Tofu
Ingredients
- ½ lb. ground pork
- 1 package tofu, hard or med. hard
- 1 tsp salt
- ½ tsp white pepper
- ½ tsp MSG
- 1 tsp sesame oil
- ¼ tsp sugar
- 1-2 tbs oyster sauce
- 2 tbs soy sauce
- 2-3 tbs cornstarch
- 2 tbs Chinese rice wine
- ¼ C chicken stock
Directions
- Season Pork: Mix salt, MSG, white pepper, and sugar into ground pork until well combined.
- Add Sauces: Stir in soy sauce, oyster sauce, sesame oil, and rice wine. Mix thoroughly.
- Marinate: Incorporate cornstarch fully and marinate at least 30 minutes.
- Prep Tofu: Cut tofu into ½" cubes; set aside.
- Heat Wok: Heat 2 tbs oil in a wok until very hot.
- Cook Pork: Add pork and stir-fry, turning frequently to coat with oil and build fond on the wok.
- Deglaze: Slowly add chicken stock to loosen the fond. Mixture will thicken quickly because of the cornstarch. Add more stock for a thinner sauce.
- Boost Sauce (Optional): Add an additional 1 tbs oyster sauce if desired.
- Add Tofu: When pork is nearly done, gently add tofu and stir carefully to coat. Cook 2-3 minutes, just long enough to heat through and absorb sauce.
- Serve: Serve hot with steamed rice and stir-fried vegetables.
