Queen's Royal Cupcakes
Ingredients
Cake
- 15g vinegar
- 300 ml milk
- 50 ml vegetable oil
- 60g butter (melted and cool)
- 2 eggs
- 5 ml vanilla essence
- 250g self-raising flour
- 75g cocoa powder
- 300g caster sugar
- 10g bicarbonate of soda
- 100g white chocolate chips
Buttercream Frosting
- 90g high percentage dark chocolate
- 100g butter
- 125g icing sugar
- Preheat oven to 150°C
Directions
Cake
- Mix Dry: Combine flour, sugar, cocoa powder, and bicarbonate of soda in a bowl.
- Mix Wet: In a separate bowl, whisk eggs with vanilla, melted butter, oil, milk, and vinegar.
- Combine: Gradually add the wet ingredients to the dry ingredients, mixing until smooth and lump-free. Stir in chocolate chips.
- Bake: Spoon the batter evenly into cupcake liners using a metal spoon. Bake 15-18 minutes, until cupcakes are golden, springy to the touch, and a toothpick inserted in the center comes out clean.
- Cool: Remove from the oven and allow to cool completely before frosting or serving.
Frosting
- Make Frosting: Cream sugar and butter together until light and creamy.
- Add Chocolate: Beat in the warm, melted chocolate until fully incorporated.
- Finish: Pipe the icing using a decorating bag or spread smoothly with an offset spatula.
