Raspberry Oatmeal Bars
Ingredients
- 350 g unsalted butter softened
- 440 g packed brown sugar
- 240 g old-fashioned rolled oats
- 360 g all-purpose flour
- 1 tsp pure vanilla extract
- 1 tsp salt
- 1 tsp baking powder
- 1 (18-oz) jar raspberry jam Smucker's or your favorite brand
Directions
- Prep: Preheat oven to 350°F and butter a 9x13" baking pan.
- Make Base: Cream butter and brown sugar until smooth. Stir in vanilla, oats, flour, salt, and baking powder, scraping bowl as needed.
- Form Crust: Press ¾ of the mixture evenly into the pan and prick with a fork.
- Add Filling: Spread jam evenly over the crust.
- Top: Crumble remaining oatmeal mixture over the jam.
- Bake: Bake 45-50 minutes, until lightly golden and jam is bubbling.
- Cool: Let cool completely before cutting into bars.
Chef's Notes
- Add 1 tsp lime juice to the raspberry jam to cut the sweetness
- Dust the top with confectioner's sugar for presentation
