Raspberry Oatmeal Bars

  1. Prep: Preheat oven to 350°F and butter a 9x13" baking pan.
  2. Make Base: Cream butter and brown sugar until smooth. Stir in vanilla, oats, flour, salt, and baking powder, scraping bowl as needed.
  3. Form Crust: Press ¾ of the mixture evenly into the pan and prick with a fork.
  4. Add Filling: Spread jam evenly over the crust.
  5. Top: Crumble remaining oatmeal mixture over the jam.
  6. Bake: Bake 45-50 minutes, until lightly golden and jam is bubbling.
  7. Cool: Let cool completely before cutting into bars.
