Shrimp Creole
Ingredients
- 4 lb shrimp
- ¾ C bacon grease
- 3 stalks celery, chopped
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 8 oz tomato sauce
- 2 dashes tabasco sauce
- 1 bay leaf
- 1 tsp lemon juice
- 1½ tsp white pepper
- ½ tsp thyme
- ½ tsp basil
- ½ C parsley
- 3 large peeled tomatoes (or one 14.5 oz can of tomatoes)
- 1 bunch green onions, chopped
- 2 tbs sugar
- 2½ C shrimp stock
- Salt, black pepper and cayenne to taste
Directions
- Sauté Base: Cook onions, garlic, bell pepper, and celery in bacon grease 5 minutes, until softened.
- Simmer Sauce: Add tomato sauce and simmer 30 minutes.
- Add Stock: Stir in stock and simmer 10 minutes more.
- Build Flavor: Add tomatoes, green onions, bay leaf, sugar, Tabasco, lemon juice, and seasonings. Simmer 1 hour.
- Cook Shrimp: Add shrimp and simmer 5-7 minutes, just until cooked through.
- Serve: Serve hot over rice, garnished with additional parsley.
Chef's Notes
- One 14½-oz can peeled stewed tomatoes (with or without chiles) may replace fresh tomatoes.
