Shrimp & Grits
Ingredients
Grits
- 475 ml vegetable broth
- 475 ml milk
- 80 g butter, cubed
- ¾ tsp salt
- ½ tsp pepper
- 130 g uncooked old-fashioned grits
- 230 g shredded pepper jack (~8 oz)
Shrimp
- 8 thick-sliced bacon strips, chopped
- 1 lb uncooked medium shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1 tsp Cajun seasoning
- 4 green onions, chopped
Directions
- Make Grits: In a large saucepan, bring broth, milk, butter, salt, and pepper to a boil. Slowly stir in grits, reduce heat, cover, and cook 12-14 minutes, stirring occasionally, until thickened.
- Add Cheese: Stir in cheese until melted. Keep warm.
- Cook Bacon: In a large skillet over medium heat, cook bacon until crisp. Remove to a wire rack with a slotted spoon, reserving 4 tsp drippings.
- Sauté Shrimp: Add shrimp, garlic, and seasoning to the reserved drippings. Sauté until shrimp turn pink.
- Serve: Spoon shrimp over grits and garnish with green onions.
