Steak Quesadillas
Ingredients
- ½ lb pound of thin-cut steak (e.g., top sirloin)
- 1 large bell pepper
- 1 yellow onion
- 8-10 oz sharp cheddar cheese, shredded
- Flour tortillas
- Butter for cooking steak
- Salt and pepper
- Sour cream
Directions
- Sear Steak: Heat oil in a cast iron pan over medium‑high heat. Sear steak on both sides until browned, about 3 minutes per side. Remove and let rest.
- Prep Vegetables: Dice pepper and onion.
- Sauté: Add a little oil or butter to the pan. Cook vegetables with salt and pepper until softened and lightly browned, about 5 minutes.
- Combine: Cut steak into bite-size pieces and return to the pan with vegetables. Cook briefly, then remove from heat.
- Assemble: Place half a tortilla in the pan and sprinkle with cheese. Add steak and vegetable mixture, then more cheese. Fold tortilla over.
- Cook: Cook over medium‑low heat until cheese melts and tortilla is lightly browned on both sides.
- Serve: Slice into wedges and serve with sour cream.
