Sweet Potato Chili (V)
Ingredients
- 2 lb sweet potatoes, peeled and cut into bite-sized chunks (about 4 cups)
- 1 medium onion, chopped
- 2 medium carrots, peeled and thinly sliced
- 1 medium green bell pepper, seeded and chopped
- 1 medium red bell pepper, seeded and chopped
- 2 tbs canola oil
- 3 garlic cloves, minced
- 1½ C unsalted roasted peanuts
- 28 oz Roma tomatoes, crushed
- 6 oz tomato paste
- 8 oz diced mild green chiles with liquid
- 4-6 chili powder, to taste
- 1 tbs ground cumin, to taste
- 1 tbs sugar
- Salt and freshly ground pepper, to taste
Directions
- Sauté Base: In a large pot, heat canola oil over medium heat. Add onion, carrots, and bell peppers and cook until lightly golden, stirring occasionally.
- Add Garlic: Stir in garlic and cook briefly until fragrant.
- Build: Add sweet potatoes, peanuts, tomatoes with juices, tomato paste, chiles, chili powder, cumin, and sugar. Stir to combine.
- Simmer: Bring to a boil, then reduce heat and simmer gently until sweet potatoes are tender, about 15-25 minutes.
- Season & Serve: Adjust seasoning with additional spices, salt, and pepper as needed. Serve hot.
