Sweet Potato and Sausage Hash
Ingredients
- 2 medium sweet potatoes, peeled and cut into ½" cubes
- ½ tbs olive oil
- 2 links uncooked chicken sausage
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- Pinch of cayenne pepper
- Salt and black pepper to taste
Directions
- Parboil Potatoes: Boil potatoes in a saucepan until fork-tender (about 4 minutes); drain.
- Brown Sausage: Heat oil in a large cast-iron or nonstick skillet over medium. Remove sausage from casings and sauté 4-5 minutes until cooked through. Drain and set aside.
- Cook Vegetables: In the same pan, add potatoes, onion, and red pepper. Cook until browned, about 7 minutes.
- Combine: Return sausage to the pan, season with cayenne, salt, and pepper, and stir to combine.
- Serve: Divide among four plates or bowls and top each serving with a fried egg and Tabasco.
Chef's Notes
- Chicken-apple sausage is a good choice for this dish
