Sweet Potato and Sausage Hash

  1. Parboil Potatoes: Boil potatoes in a saucepan until fork-tender (about 4 minutes); drain.
  2. Brown Sausage: Heat oil in a large cast-iron or nonstick skillet over medium. Remove sausage from casings and sauté 4-5 minutes until cooked through. Drain and set aside.
  3. Cook Vegetables: In the same pan, add potatoes, onion, and red pepper. Cook until browned, about 7 minutes.
  4. Combine: Return sausage to the pan, season with cayenne, salt, and pepper, and stir to combine.
  5. Serve: Divide among four plates or bowls and top each serving with a fried egg and Tabasco.
