Tartiflette
Ingredients
- 2½ lb potatoes, peeled
- ½ lb slab bacon, cut in small dice
- 1 medium onion, thinly sliced
- ¼ C dry white wine
- 1 lb Reblochon-style cheese, sliced
- Salt and pepper, to taste
Directions
- Preheat: Heat oven to 350°F.
- Cook Potatoes: Place potatoes in a pot, cover with water, and bring to a boil. Cook until tender, about 20 minutes. Drain, cool slightly, and dice.
- Cook Bacon & Onion: In a sauté pan, cook bacon until browned. Drain, leaving a small amount of fat. Add onion and cook until golden, about 5 minutes. Add bacon and wine and cook another 5 minutes.
- Combine: Add potatoes and season with salt and pepper. Remove from heat.
- Assemble: Layer half the potato mixture in an ovenproof dish. Top with half the cheese. Add remaining potatoes, then top with remaining cheese.
- Bake: Bake until golden and bubbling, about 20 minutes.
