Thai Pork Loin
Ingredients
- 12 oz boneless pork loin
- 2 tsp dark soy sauce
- 1 tsp fish sauce
- 2 cloves garlic, minced
- 2 tbs lime juice
- 1 C peanut oil
- ½ C fresh coriander chopped coarsely
- 2 scallions, using all, chopped
- Salt and freshly ground pepper to taste
Directions
- Make Marinade: Blend soy sauce, fish sauce, garlic, and lime juice. With the motor running, slowly stream in peanut oil until emulsified.
- Marinate Pork: Transfer marinade to a bowl, stir in coriander and scallions, add pork loin, cover, and refrigerate at least 2 hours.
- Prep Fire: Prepare a wood or charcoal grill and allow it to burn down to hot embers.
- Season Pork: Remove pork from marinade and season generously with salt and pepper.
- Grill: Grill pork ~5 minutes per side, basting occasionally with the marinade, until cooked to your preferred doneness.
- Serve: Slice and serve warm.
