Turkey Gumbo
Ingredients
- 1 leftover turkey carcass
- Leftover gravy and sliced turkey meat
- 1 lbs smoked sausage, sliced
- 2 onions, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, chopped
- 2 tbs parsley
- 1 bell pepper, chopped
- 2-3 tsp salt
- 1 tsp white pepper
- 1 large bag frozen okra (Optional)
- Louisiana hot sauce and Tabasco sauce to taste
Directions
- Make Broth: Place turkey carcass and any boneāin pieces in a large pot. Cover with water and boil until meat falls off the bone.
- Build Gumbo: To the broth and meat, add leftover sliced turkey, gravy, onions, garlic, celery, parsley, salt, pepper, okra, and sausage.
- Simmer: Cover and simmer slowly for 1 to 1½ hours, adjusting time for desired thickness.
- Serve: Sprinkle individual servings with gumbo filé and serve over rice.
Chef's Notes
- This is a good recipe for the age-old issue of disposing of the festive leftover turkey. Do be afraid to add any other leftovers, such as dressing and vegetables. All are welcome here.
- Okra is listed as optional, but for me, gumbo isn't gumbo without okra. Listen to your heart.
