Ina Garten's Turkey Meatloaf
Ingredients
- 5 lbs ground turkey breast
- 3 C chopped yellow onions (2 large onions)
- 2 tbs olive oil
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp fresh thyme leaves (½ tsp dried)
- 80 ml Worcestershire sauce
- 180 ml chicken stock
- 1½ tsp tomato paste
- 1½ C plain bread crumbs
- 3 extra-large eggs, beaten
- 180 g ketchup
Directions
- Prep Oven: Preheat oven to 325°F.
- Cook Onions: In a medium sauté pan over medium-low heat, cook onions with olive oil, salt, pepper, and thyme until translucent but not browned, ~15 minutes.
- Build Flavor: Stir in Worcestershire sauce, chicken stock, and tomato paste. Mix well and allow to cool to room temperature.
- Mix Meatloaf: In a large bowl, combine ground turkey, bread crumbs, eggs, and the cooled onion mixture. Mix thoroughly.
- Shape & Top: Shape mixture into a rectangular loaf on an ungreased sheet pan. Spread ketchup evenly over top.
- Bake: Bake until internal temperature reaches 160°F, about 1½ hours.
- Serve: Serve hot, at room temperature, or cold in a sandwich.
Chef's Notes
- This is another wonderful recipe from Ina Garten
- A pan of hot water in the oven under the meatloaf will keep the top from cracking.
