Watercress Soup
Ingredients
- 2 lbs Pork spare ribs
- 5 cups of water
- 2 tbs Better Than Bouillon Vegetable base
- Salt, white pepper, MSG and seasoning soy sauce (to taste)
- 2 bunches of watercress
Directions
- Season: Season spare ribs with salt, white pepper, and soy sauce to taste.
- Start Soup: In a large pot, bring water, vegetable base, and ribs to a boil over high heat. Reduce heat and simmer for 30 minutes, skimming the surface as fat renders.
- Adjust: Taste broth and add more soy sauce if needed.
- Add Greens: Wash watercress thoroughly and add to the pot. Simmer until tender, about 15 minutes, stirring occasionally.
Chef's Notes
- Pork neck bones or other meaty soup bones may be substituted.
