Breakfast Sausage Casserole
Ingredients
- 1 lb hot sausage
- 6 eggs, beaten
- ¾ C milk
- 1 can biscuits or 170 g tater tots (15-20 tots)
- 2 C cheddar cheese (1 lb total, cheddar and pepper jack mix)
Directions
- Prep Pan: Generously grease an 8x8" baking dish.
- Add Base: Cut biscuits into 6-8 pieces and place in the pan. (If using tater tots, add them instead.)
- Cook Sausage: Brown sausage in a skillet, drain thoroughly, and spread evenly over the biscuits or tots.
- Add Custard: Beat eggs with milk, season with salt and pepper, and pour evenly over the casserole.
- Top & Bake: Sprinkle cheese on top and bake at 400°F for 35-40 minutes, checking the center for doneness.
- Rest & Serve: Let rest 5-10 minutes before serving. Great with salsa.
Chef's Notes
- Tater tots work well in place of canned biscuits, and cutting the cheese in half still yields great results.
- Adding about 8 oz shredded Gruyère enhances flavor and creates a richer crust.
- Season the eggs with a splash of fish sauce and Louisiana hot sauce. For extra zing, consider adding Coleman's dry mustard.
