Smothered Oxtails
Ingredients
Oxtails
- 6 lbs oxtails
- 2 C flour, all purpose
- 1 tbs Cajun seasoning
- 1 stick of butter, unsalted
- Extra virgin olive oil
Sauce
- 6 C beef broth low sodium
- 1 red onion, sliced
- 1 white onion, sliced
- 3 tbs unsalted butter
- 3 tbs extra virgin olive oil
- 3 tbs flour, all purpose
- 5 cloves garlic, minced
- 2 tsp Cajun seasoning
- 2 tsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- Fresh chopped parsley to garnish.
Directions
Oxtails
- Preheat: Heat oven to 350°F.
- Prep Oxtails: Rinse oxtails, pat dry, and place in a large bowl. Coat with olive oil, salt, and pepper.
- Coat: Combine Cajun seasoning and flour in a bag. Add oxtails and shake to coat. Tap off excess and set aside.
- Brown: Heat butter and olive oil in a large skillet. Brown oxtails in batches until golden on all sides.
- Finish: Repeat until all oxtails are browned.
Sauce
- Sauté Base: In the same pan, add butter and olive oil. Add onions and cook until softened, about 5 minutes. Add garlic and cook briefly.
- Season & Thicken: Add spices and stir well. Add flour and cook for a few minutes.
- Build Sauce: Add broth, bring to a boil, then reduce heat and simmer until slightly thickened.
- Bake: Pour sauce over oxtails, cover with foil, and bake until very tender, about 3 to 3½ hours.
- Serve: Serve hot with rice and fried corn.
